Yota’s Stuffed Vegetables with a twist of Oreanthi Light+Lean
Ingredients:
6 tomatoes
6 peppers
3 potatoes cut in 6 parts
18 to 20 tablespoons of rice
3 onions finely diced
2 pyramids of Oreanthi Light + Lean (cut open and remove the content)
3 or 4 tablespoons of raisins
3 tablespoons of pine nuts
1 cup of olive oil
Salt and freshly ground pepper
 
Cut open the tops of the vegetables and remove the inside of the peppers and tomatoes. Sprinkle the inside of the tomatoes and peppers with salt, turn them upside down and leave to drain. Keep the inside of the tomatoes and blend them. Heat half of  the olive oil in a pan and sauté the onions until they shine. Add the rice and pine nuts and sauté some more. Finally add the blended tomatoes and raisins, the contents of the 3 Light + Lean pyramids, salt and pepper and cook for 5 more minutes. Remove from the fire and fill each tomato and pepper ¾ full. Cover the stuffed vegetables with their tops and place them in a baking pan. Season the potatoes with pepper and salt and place them in between the stuffed vegetables. Pour with the remaining olive oil and bake for 1 hour and 15 minutes in a pre heated conventional oven at 180˚ C.
